Broadline vs. Specialty Distributors for a Multi-Brand Ghost Kitchen?

We are scaling our virtual kitchen space from 2 brands to 5 (Mexican, Mediterranean, and American comfort food). Managing 6 different niche supplier deliveries every morning is killing our receiving manager. Are broadline distributors good enough for specialized ingredients, or will quality tank?

Quality will take a hit on key specialty items if you go 100% broadline. Their custom spices, specialty cheeses, and authentic sauces are usually mediocre white-label stuff. My rule of thumb: buy all oil, flour, packaging, and basic proteins from one broadliner, keep 1-2 specialty vendors for signature items.

That makes sense. We were reviewing supply chains for our Mediterranean menu and found import specialists like wholesale food distributors which have a lot of items we currently buy at marked-up prices from local brokers. I guess the real trick is consolidating receiving times so our staff isn't standing at the loading dock all morning.

Exactly. Negotiate specific delivery windows in your contract. Tell your vendors you only accept deliveries between 6:00 AM and 9:00 AM. If they can't agree to a window, don't sign with them.
